Ingredients for 4 persons: 1 tbsp. light balsamic vinegar Salt, pepper 3 tbsp. virgin olive oil 80 gr Soft Organic Tomatoes 2 tbsp. pine nuts 1 cucumber 100 gr mozzarella 1 bunch of spring onions
Mix together the vinegar and the salt, pepper and olive oil in a large bowl. Slice tomatoes into strips and add to the mixture. Allow them to infuse for a while.
Roast the pine nuts in a small dry pan (i.e. no oil). Wash and slice the cucumber. Drain the liquid from the mozzarella and slice. Wash and then finely slice the spring onions. Clean the rocket salad and tear off a handful.
Add the ingredients to the Soft Organic Tomatoes and mix lightly. Serve the salad. Preparation time: 20 minutes
